For most kids, a peanut butter sandwich and a glass of milk is a healthy snack.
But, for a growing number of children with food allergies -- that snack could be fatal.
Outlook's Richard Ager talked with a leading allergist about treatments --and then went food shopping with a local family. As you'll see, it goes far beyond knowing what's safe to put on a plate.

script iconIntro Eat on Budget
Return to index of stories...
How do you get teenagers to eat a healthy diet when their idea of a good meal is a burger, fries and a 2 liter bottle of soda to wash it down.
Can they buy and make a nutritious meal that their peers will love and their parents can afford?
I took that challenge to a middle school in Durham.and here's what happened.
script iconStory Eat of Budget
Return to index of stories...
Trk1: If given a choice between eating fresh fruits and vegetables.or stuffing their faces with pizza - we know what most teens will opt for.
TRK2: One way to change the way kids think about food - is to get them involved in preparing it.
SOT: 3:12:43 Kathy: Your challenge today is to create a healthy pizza, on a budget, that tastes good:53
TRK3 Life skills and Wellness teacher Kathy Bonaccorsi - jumped at the chance to put her 8th graders to the nutrition test.
Sot: 3:16:35 kathy: don't forget to read.anything in pkg…wrapper a box. 3:16:42.look at nutrient facts 3:16:46 …check out saturated fat…:51
TRK4: Nothing like a healthy competition to peak students interest.
TRK 5 Meet Team Brady - with chefs Kersten and Hannah - and taking them on: the Pizzaheads with chefs Cody and Tom.
nats Heidi: I hope you are pumped for this challenge 3:13:42 clip 0555
Nats: Heidi: In your teams of 2 you have budget.goal to stretch dollar use that wisely 3:13:57.
TRK: Judging Criteria also includes color, local foods, and nutrient analysis for not just a pizza, but an appetizer and fruit dessert as well.
? Nats.you really want to incoprate fruits and vggies in your meal. 3:14:15
TRK6: So, what's their biggest challenge?
SOT: Kathy: 3:21:40 clip 0561 / navigating the grocery store is-.
it is a new territory.
NATS: music up
STAND UP CLIP 0587 4:03:37 stand up It's not that hard to eat healthy on a budget: A good rule of thumb: shop the outside aisles of the store FIRST, that's where you'll find the healthier choices is generally processed and often a lot more expensive - Let's see if our student shoppers have been able to avoid the Riskier INNER AISLES
TRK: So far so good.
TRK: Students are checking for whole wheat on the label.
3:52:17 they're looking at whole wheat vs wheat.a lot of people grab.tan or brown.100% whole wheat and its not:28
one part of wheat kernel -- 100% whole wheat:35 or it will just say whole wheat 3:52:37
TRK: Will team Brady.fumble - or score.
3:52:42 Hannah did you get some whole wheat yup…awesome. 3:52:47
TRK: The pizzaheads appear to be looking for extra points on pricing.
CLIP 0581/3:59:28 boys adding up groceries ** ** 3:59:41 pineapple cu
3:59:56 boys watching as add up **
4:00:03 cu of register with tally **
Nats 4:00:12 17.64 -- hands over money cash back 2/36 **
TRK: So, how are the girls faring?
CLIP 0583 04:02:35 You guys look like you were sweating bullets at the end.
04:02:37 Yeah, we had like 70 cents left over. Yeah 24.27.
04:02:58 Still feeling confident about this competition?
04:03:01 Yeah I think we are going to wiln. Yeah we are going to win.
TRK: But, Will their ingredients pass the nutrional analysis ? Registered Dietition, Joanne Burke will be the judge of that.
SOT clip 1053 04:26:52 beth Well this is team Pizza Head and we can see some of here items here, what do you think? How did they do?
04:26:58 joanne I think they did pretty well had a lot of cartinoids, they've got nice flavors, orange, pineapple…whole wheat pizza dough, a good variety of tastes.ham add of more fat…but again as fat.see how it comes out in the cooking. 4:27:35
Clip 1055 04:29:41 Ok let's check in with Team Brady. 04:32:05 There receipt is about 7 dollars higher, then the other group and part of that is due to some of the items that they chose so they could have gone a little bit less costly if they have used deharted basil kind of products. 04:32:17
04:32:36 In terms of color, they've got some great color going on. They got again carotnoids very rich flavor that is going to be imparted in the pizza, so I think we are up for a good challenge here, again choosing the whole wheat pizza dough is so much better than just the white refined flour which really most of the time what you get in most pizza products. 04:32:58 So-And they gained competency.
TRK: How does frozen pizza stack up against the student's home cooked version?
SOT: Joanne… go to that freezer and you think this is going to be fast and quick and gee its going to be healthy because you know there's pepper's and spinach and onion, but WHEN when you dissect it; which I did in the name of science I came out with about three teaspoons of spinach and two of red pepper and I am hoping that there is some red onion there. SO as you can really see when you make your own you are going to put on more ingredients and have a real serving. All of this combine would count as one serving of vegetables.
TRK: If that demonstration doesn't persuade our panel of judges maybe taste will.
04:35:33 It's going to be close, because each have some very strong points, we got some good flavor and variety here the taste is going to have be the criteria because it's pretty close.
NATS: Jam 1062 are you ready, judges waiting… on mark get set go 4:42:21
